Buckwheat - The Super Seed

Have you ever tried buckwheat? Unlike wheat, buckwheat is actually not a grass at all - it’s a seed. And so it doesn’t contain any gluten.
Buckwheat can be found as flour, raw groats, raw sprouted (great cereal alternative), roasted (called kasha) or as noodles (called soba.)
Benefits:
- Gluten Free! YAY!
- Blood sugar stabilizing
- Cardiovascular support
- Kidney support
- High in all eight amino acids - especially lysine
- Builds blood and neutralizes toxic acidic waste
- Gallstone prevention
- Rich in dietary fiber
- 100% more calcium than other grains
- Rich in vitamins E and B
It makes a great Breakfast Porridge:
Cook up 1 cup kasha or buckwheat with 2 cups water or almond milk.
Add in your favorite warm spices - ginger, cardamom, cinnamon or vanilla.
Let simmer for 20 minutes.
Serve with chopped nuts, a sprinkle of cinnamon and a dollop of grass fed butter.
…Or if you want a fancy alternative, try these Buckwheat Pancakes over the Holiday weekend.
Also - if you happen to live in Brooklyn like me, head over to Karloff for a warm bowl of kasha with kale soup on top. So hearty, warming and delicious.
