Farm Fresh Gazpacho Recipe

I spent last weekend up in Hudson, New York, and it was quite a hot one! While most evenings are filled with barbecue feasts with great friends, it is so hot in the middle of the day that a big feast doesn’t feel right. Instead, we went to the local farmers market and stocked up on some delicious vegetables. And instead of getting into some elaborate cooking (who wants to be inside the kitchen on perfect summer days anyways ??) I just made a simple cold soup that required no cooking at all, just a little blending…
RECIPE:
4 large heirloom tomatoes
1 medium sized (or 2 small) cucumber
1 green pepper
1/2 bunch of basil
1/2 bunch of parsley
1 small jalapenjo pepper
1 tbsp apple cider vinegar
salt and pepper to taste
Save 1/2 a tomato and 1/2 a cucumber and cut into small cubes.
For all the rest, cut into large chunks and trow in your blender. Season with salt and pepper and add in your cubes. Drizzle with a really good olive oil and serve.
